+
+30g lemon peel

+30g acid (27 citric, 3 malic)
+1g sea salt
+500ml water
+
+Ratio Recipe:
+
+1 part lemon peel
+1 part sugar
+1 part acid (.9 part citric, .1 part malic)
+.03 part sea salt
+16.67 part water
+
+add the rest of the juice
+

+
+30g lime peel (avoid pith)
+30g sugar
+36g acid (24 citric, 12g malic)
+1g sea salt
+500ml water
+
+Add peel, sugar, acids and salt
+Rest
+Blend with water
+Strain, bottle
