30g lemon peel
30g sugar
30g acid (27 citric, 3 malic)
1g sea salt
500ml water

Ratio Recipe:

1 part lemon peel
1 part sugar
1 part acid (.9 part citric, .1 part malic)
.03 part sea salt
16.67 part water

add the rest of the juice


## Lime Super Juice

30g lime peel (avoid pith)
30g sugar
36g acid (24 citric, 12g malic)
1g sea salt
500ml water

Add peel, sugar, acids and salt
Rest
Blend with water
Strain, bottle
